Meal Prep: Grilled Chicken + Broccoli

Time to have fun in the kitchen and make your daily meal prep easier on you! 

Ingredients:

Grilled chicken:
3 tbsp olive oil
2 tbsp chili garlic sauce
1 tbsp honey
1 tbsp rice wine vinegar
2 cloves minced garlic
1 chicken, cut into pieces
thin sliced scallions


Broccoli:
1 head of broccoli
1 tbsp salt

Instructions:

Grilled chicken:
1. In a bowl, blend together the olive oil, chili garlic sauce, honey, red wine vinegar, and garlic.
2. Add your chicken to the marinade and let sit in fridge in a covered container for 30 minutes to marinate.
3. Heat your grill to medium high and oil your grill rack.
4. Place each piece of chicken on the grill over the high heat and cook for around 4-5 minutes on each side or until you see dark grilled marks.
5. Move your chicken over to the indirect section of the grill and cook your chicken until it reaches an internal temperature of 165 degrees, about 10-15 minutes
6. When the chicken is cooked thoroughly, take them off the grill and let rest for a while and add your scallions on top. Then, add into your meal prep container.
You could add your grilled chicken over rice as well!


Broccoli:
1. Cut through the broccoli stem as close as you can to the crown. Cut through the trunk of each floret into bite sized pieces and rinse your florets with water.
2. In a large pot, bring water to a boil. Sprinkle your salt into the water then add your broccoli and cook for 1-2 minutes or until tender. Then, pour into an ice water pot to stop cooking. Once finished, add into your other compartment of your meal prep container.
