Meal Prep: Pasta Salad + Meat and Cheese Toothpick Kabobs
Time to have fun in the kitchen and make your daily meal prep easier on you!
Ingredients:
Pasta Salad:
1 pound Elbow Macoroni
1/4 red onion (minced)
1/4 tomato (chopped)
3 hard boiled eggs (diced)
1/4 cup sweet pickles (chopped)
1 cup mayonnaise
1/4 cup pickle juice
2 tsp granulated sugar
1 1/2 tbsp dijon mustard
salt and pepper
chopped parsley
Meat and Cheese Kabobs:
Small blocks of cheddar cheese (or your choice of cheese)
Thin slices of salami (or your choice of meat)
Toothpicks
Instructions:
Pasta Salad:
1. Cook your elbow macoroni in salted water until desired doneness. Then, drain your pasta in a drainer and rinse under cold water.
2. Move the drained pasta to a large bowl and add in your onions, tomatoes, eggs, and sweet pickles.
3. In a small bowl, mix togther your mayonaise, pickle juice, sugar, dijon mustard and season with your salt and pepper. Then, add your mixture to the macaroni mix and toss until coated.
4. Add your chopped parsley and more salt and pepper for taste and place in the refrigerator for 1 hour. Then, add into your meal prep container.
Meat and Cheese Kabobs:
Place cheese cubes and meat slices one after the other onto each toothpick. Add into your other compartment of your meal prep container.
