Meal Prep: Bean and Corn Salad with Shrimp + Veggies
Time to have fun in the kitchen and make your daily meal prep easier on you!
Ingredients:
Bean and Corn Salad:
1 can of pinto beans, rinsed and drained
1 green bell pepper (chopped)
1 red bell pepper (chopped)
1 red onion (chopped)
1 package of frozen corn kernels
1/2 cup olive oil
1/2 cup red wine vinegar
2 tbsp fresh lime juice
1 tbsp lemon juice
2 tbsp white sugar
1 tbsp salt
1 clove crushed garlic
1/2 tbsp pepper
1 dash of hot pepper sauce
1/2 tsp chili powder
Shrimp + Veggies:
2 cups mixed greens or any lettuce, chopped
1/2 cup spinach
1/2 cup cooked medium shrimp
1/2 cucumber, chopped
dressing of your choice
Instructions:
Bean and Corn Salad:
1. Mix your beans, bell peppers, red onion and frozen corn together in a large bowl
2. Then, blend together the olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, and pepper in a small bowl. Sprinkle the hot sauce and chili powder in to taste
3. Lastly, pour your mixed dressing over vegetables and blend together. Then, add into your meal prep container.
Shrimp + Veggies:
In a large bowl, combine your mixed greens, spinach, shrimp, and cucumbers. Drizzle dressing of your choice over salad and toss to coat. Then, add into your other compartment of your meal prep container.
