Chicken Fajitas
These mouthwatering Chicken Fajitas made with colorful vegetables and delicious meat will be perfect for your next fiesta!
Ingredients:
1 lb boneless skinless chicken breast
1/2 cup olive oil and 1 tbsp of olive oil
1/4 cup lime juice
2 tsp cumin
1/2 tsp red pepper flakes, crushed
Salt
Pepper
3 bell peppers, thinly sliced
1 large onion, thinly sliced
Instructions:
1. Take your 1/2 cup of oil, lime juice, cumin, and red pepper flakes and blend together in a large bowl. Sprinkle your chicken breast with salt and pepper. Add your chicken breast to the bowl and toss to coat. Place in the fridge for at least 30 minutes to marinate.
2. Take the 1 tbsp of olive oil and heat it in a skillet on medium heat. Add your chicken breast and let cook for 8 minutes on each side or until golden brown. After it has rested for 10 minutes then you can slice your chicken breasts into strips.
3. Place your bell peppers and onion in your skillet and cook for 5 minutes or until soft. Add your sliced chicken breast and toss together.
4. Serve with tortillas!
