Butternut Squash Soup
This creamy, savory Butternut Squash Soup is not only easy to make but also perfect for a cold, winter night!
Ingredients:
1 tbsp coconut oil
2 medium shallots, thinly diced
2 garlic cloves, minced
6 cups butternut squash, peeled and chopped
1 pinch salt
1 pinch pepper
1 1/2 tbsp curry powder
1/4 tsp ground cinnamon
1 can light coconut milk
2 cups vegetable broth
1-3 tbsp maple syrup
Instructions:
1. Take a large pot and heat over medium heat.
2. Add your oil, shallots, and garlic. Let cook for 2 minutes while stirring.
3. Mix in your butternut squash and season with salt, pepper, curry powder, and ground cinnamon. Mix to coat. Cook for 4 minutes while covered, occasionally stirring. Then, add your coconut milk, vegetable broth and maple syrup.
4. Reduce heat to low and cook for 15 minutes while covered until butternut squash is tender.
5. Move your soup to a blender and mix on high until smooth. After, move your soup back to your pot.
6. You can add more seasonings as needed for taste and continue cooking for 2-3 minutes on medium heat.
